Farmers Market II (originally posted on 8/3/08)

- What I bought:
- Purple "green" beans
- Cucumbers
- Carrots
- Baby Kale
- More of my favored blueberry chevre
- Raspberry honey
- A loaf of honey wheat bread
- Yellow cherry tomotoes
- Brandywine tomatoes
- Beets
- Swiss Chard
- Red Onions
As the growing season progresses, there is a huge variety of food available, so I went a little crazy:
- What I did with it:
- We were having a party that same night, so I made a big beet salad, almost identical to the one I made last week but without the oranges. I also added a little crushed coriander seed.
- Fresh Brandywine tomatoes are so incredibly delicious - they should not be tampered with. I sliced them, arranged them on a plate, sprinkled them with a little sea salt, pepper and olive oil, and feasted. DEE-lish!
- As I write this I am eating a piece of honey whole wheat bread with the blueberry chevre and a drizzle of raspberry honey. WOW!!! (See picture below.)
- I pickled most of the cucumbers - not in the typical pickling method that requires sterilized jars and long processing times. I just sliced the cucumbers, put them in a covered pot with a mixture of water, cider vinegar, sugar, soy sauce, and wasabe, brought them to a boil, then turned off the burner and let the pickles cool. These were served at the party with the beets.
- I am going to mix some of the beet greens, which have been cut and rinsed, with a homemade mustard vinaigrette, and serve the salad with the yellow cherry tomatoes and red onion slices with tonight's dinner entree (shrimp scampi).
- The rest of the cucumbers and the rest of the beet greens, along with the carrots and Swiss chard, will be finely chopped and mixed with tomato juice, garlic and seasonings to make a refreshing gazpacho for the next few day's worth of lunches.
- Tomorrow night's dinner will be a stir-fry with the purple green beans, chicken and and the baby kale in a peanut sauce (see last week's carrot and beet greens stir fry for the ingredients of that sauce)..
One more week, and another bounty of nutritious and delicious meals.
